(1) Fried Pastries
Ingredients (for 4-6 people):
For the Dough:
• 1 kg flour
• 1 small wine glass of oil
• 1 small wine glass of milk or tsikoudia (Cretan spirit)
• ½ egg
Filling (Chicken Mousse):
• 1 chopped chicken breast
• Chopped mushrooms
• Chopped onion
• Egg white
• Dried thyme
• Dried parsley
• Dried mint
Procedure:
Dough for Pastries: Mix all the ingredients together to form a pliable dough. Roll out the dough using a pasta machine or a rolling pin. Cut into even squares, fill half with your desired filling, and fold over. Press the edges together with your fingers, turning the ends inward. Fry in hot oil until golden brown, then transfer to absorbent paper.
Chicken Mousse Filling: Season the chicken with salt and pepper, add an egg white, and blend in a mixer. Sauté the onion and mushrooms in a pan, then add the chicken mixture and herbs. Once well sautéed, blend the mixture again.
