White pepper is a spice that comes from the inside of peppercorns after the outer skin is removed. It requires more processing than black pepper, and its aroma is different.
White pepper is used in light-colored sauces and to add flavor to potatoes and fish. It is generally used in dishes where the taste should not dominate but rather provide a mild heat. Additionally, it is used as a raw material in charcuterie.

Recipes Using White Pepper:
(1) Mozambique Shrimp
Ingredients (for 4 people):
- 1 kg large shrimp
- 1 can of beer (I experimented with dark beer, but for more extreme flavors, use yeast beer)
- 2 teaspoons paprika
- 2 teaspoons salt
- Juice from half a lemon
- A little rosemary
- A pinch of white pepper
- A bit of Tabasco (if you can find garlic-flavored Tabasco sauce, even better; otherwise, crush 2 small garlic cloves)
- A little vegetable butter
Instructions: In a non-stick pan (a wok works best), add a bit of butter, pour in the beer, and then add the shrimp.
After a few minutes, add all the remaining ingredients and cook over medium heat for 15 minutes.
Then, let the shrimp sit in the sauce for about 45 minutes to absorb the flavors, and enjoy!
