Agar is a hydrophilic gelatinous substance extracted from the cell walls of algae, primarily from the seaweed Ascophyllum nodosum. These algae belong to the category of red algae (Rhodophyta), one of the oldest groups of eukaryotic algae.
For hundreds of years, the Japanese and Chinese learned to dry seaweed and prepare gelatinous bars for culinary use. Today, agar is widely used in the Western world due to its nutritional value and low calorie content, making it an ideal part of a balanced diet. There are many recipes using agar for pies, desserts, fruits, jams, jellies, sauces, creams, and more.
Agar consists of 80% dietary fiber and contains various valuable nutrients. It is a good source of calcium and iron and contains no sugar, fat, or carbohydrates. It aids digestion, promotes weight loss, and detoxifies the body. After ingestion, it absorbs water in the stomach and triples its volume, creating a feeling of fullness. Studies on obesity have confirmed its effectiveness as a supplement in a healthy low-calorie diet. Other benefits associated with regular agar consumption include its ability to reduce inflammation and soothe the stomach. It is preferred over gelatin because it is plant-based, unlike gelatin which is animal-derived. Agar melts at 85°C and solidifies between 32 and 40°C, has a stable texture, and is easy to use in cooking.
This property gives it a suitable balance between easy melting and good gel stability at relatively high temperatures. Since many scientific applications require temperatures close to human body temperature (37°C), agar is used in biological research and other scientific applications.

Usage:
Add 2 tablespoons (10-20g) to shakes, sports drinks, or juices. Shake well in a blender or shaker and enjoy.
