Mahlab is the seed of the Prunus Mahaleb plant, a type of cherry. Its flavor ranks it among the most delicious spices. It is used ground to enhance the sweet taste of traditional desserts. Cooks particularly add it to tsoureki (sweet bread), vasilopita (New Year’s cake), cookies, and various baked goods.
