Preparation:

Add 1 tablespoon of dried organic sage (or a pinch of fresh) to a covered container, pour in 1 cup of boiling water, let steep for 5-10 minutes, and strain before use. For washes, prepare the tea more concentrated at a dose of 50-60g in one liter of water.

Historical Information:

Sage was highly regarded in Ancient Rome as a valuable medicinal plant. It likely traveled with Benedictine monks in the 6th century across the Alps to Central Europe. Supported by Charlemagne, sage was cultivated in monastery gardens. Since the Middle Ages, it has remained a favorite herb in cooking. Originally native to the Mediterranean, its cultivation has expanded throughout Europe and North America.

Scientifically Documented Applications:

The E Commission and ESCOP recommend sage for gastrointestinal disorders, excessive sweating (internal use), and inflammation of the oral and pharyngeal mucosa (external use). For treating inflammation in the mouth and throat, the compounds in sage leaves complement each other: the essential oil acts as an antimicrobial, ursolic acid has anti-inflammatory properties, and tannins help heal damaged skin. In limited amounts, sage leaves also contain bitter compounds that stimulate appetite and gastrointestinal function. The suppression of sweat production is attributed to the tannins, supported by recent clinical studies.

Cooking Recipes with Sage:

(1) Pork Chops with Sweet-Sour Sauce
Ingredients (for 4 people):

  • 4 pork chops
  • 1-2 dried onions, sliced
  • 1/3 cup olive oil
  • 3 grated tomatoes
  • 4 pitted plums
  • 2-3 tablespoons soy sauce
  • 2-3 tablespoons dried sage
  • Pepper
  • Salt

Instructions: Fry the pork chops, season with salt and pepper, and place them on a plate. In a saucepan, heat the olive oil and sauté the onions for 3-4 minutes. Add the tomatoes and sauté. Add the plums, soy sauce, sage, salt, pepper, a little water, and let the sauce boil until it thickens.
