White pepper is the seed of the fruit, which remains after the outer skin has been removed. This is why it is smoother than other types of pepper. It has a distinct aroma and a quite spicy flavor, so it should be used with caution. Common uses include white sauces, tzatziki, béchamel, cheese pies, as well as in chicken and fish dishes.
Generally, it is used in dishes where the flavor should not dominate but rather provide a mild heat. Additionally, it is used as a raw material in the production of cured meats.
