Spinach is rich in dietary fiber and is an excellent source of various vitamins and minerals, such as vitamin A, vitamin C, vitamin K1, B vitamins, iron, calcium, manganese, magnesium, and folic acid, which serve as alerts to the immune system that viruses and bacteria are trying to invade the body.

An Australian study found that bacteria and fungi use B vitamins to produce by-products that activate immune cells to recognize infections and begin fighting them. To double the absorption of iron from spinach, it is helpful to pair it with a food rich in vitamin C (e.g., lemon, tomato, pepper).

Eye, Skin, and Hair Health
Spinach contains high amounts of vitamin A, which appears to protect eye health from sunlight and reduce the risk of irritation, dry eyes, and cataracts. Studies have also shown a link between the consumption of nitrate-rich vegetables, such as leafy greens and beets, and a lower risk of developing early-stage age-related macular degeneration (AMD), a leading cause of permanent vision loss in people aged 60 and older. Specifically, a 15-year observational study in the U.S. with 2,000 adults aged 49 and older found that those consuming 100 to 142 mg of nitrate-rich vegetables daily had a 35% lower risk of early-stage AMD compared to those consuming less than 69 mg daily. However, there was no additional benefit for those consuming more than 142 mg daily. Additionally, vitamin A helps keep skin and hair properly hydrated. It is also essential for the growth of all body tissues, including skin and hair. Furthermore, spinach is rich in vitamin C, which is crucial for building and maintaining collagen, providing structural support to the skin and hair. Moreover, iron deficiency is a common cause of hair loss, which can be avoided with adequate intake of iron-rich foods like spinach.

Cancer Prevention
Spinach is high in antioxidants, such as flavonoids, polyphenols, carotenoids, vitamin C, and folic acid. These antioxidants may help combat oxidative stress, thus reducing damage and lowering the risk of cancer. Higher consumption of leafy green vegetables has been associated with a lower risk of breast, colon, and lung cancers. However, these associations require further research.
