Sencha consists of flat, long leaves that yield a clear, yellowish extract with a delicate and spicy flavor reminiscent of freshly cut grass. It is enjoyed without milk, with light meals, or on its own at any time of the day.
Japanese Sencha tea contains whole tea leaves, unlike matcha, which is in powder form. During processing, the leaves are steamed and pressed to produce thin needle-like shapes, acquiring the characteristic aroma of freshly cut grass. Sencha is the most popular and widely cultivated tea, representing about 80% of tea production. Its taste is refreshing and slightly astringent; when brewed carefully, the astringency can be pleasant.
